Sneaking some vegetables into your diet can seem such a daunting task but with today's recipe it couldn't be easier! This simple winter warmer is easy to throw together and makes for a lovely workday lunch. You can also easily customise the recipe to your tastes, if you like. In the recipe I've used carrots, parsnips & potatoes but you're welcome to adjust it to suit whatever is in your stash at the time.
Ingredients
- 400g Parsnips, peeled & chopped
- 450g Carrots, peeled & chopped
- 200g Potatoes, chopped
- 1 Onion, finely chopped
- 2 Garlic Cloves, finely chopped
- 1 tsp Coriander Paste
- 1.2l Vegetable Stock (I used 5 Oxo cubes)
Serves 4/5 | Prep Time: 15 mins | Cooking Time: 20 mins
Once you've prepped all your ingredients, pour your stock into a (large!) saucepan and bring to the boil. Add your vegetables and simmer until they're cooked.
While they're boiling add a little low fat cooking spray into a pan and fry your onion and garlic until browned then add it to the saucepan. Now add your coriander paste and remove from the heat.
That's all the cooking done! All you need to do now is throw the whole mixture into a blender and whizz until you reach your desired consistency. Pop it into bowls and serve straight away or freeze and use within 3 months or so.
